yum yum yum! what an incredibly easy but super tasty dish from "a taste of thai" website! this is sooo darn good, and it will definitely become part of our regular meals. i didn't have sweet chili but spicy thai chili (thai kitchen brand since it's gluten free) so i added some sugar on top of the chili. enjoy!
INGREDIENTS
1 large onion, sliced
two tomatoes, sliced - all i had were cherry tomatoes
3/4 lb salmon fillets
1/4 cup sweet chili sauce - thai kitchen spicy chili sauce and mixed a pinch of sugar
1 cup loosely packed basil leaves

1 cup loosely packed basil leaves
DIRECTIONS
preheat oven to 400C
make a large double thickness of foil and lay over baking sheet
spread a layer of onions over center
spread most of the sliced tomatoes over the onions
put the salmon fillet skin side down
spread chili sauce over salmon
pile fresh basil leaves over salmon
put remaining tomato slices on top of basil
fold foil lengthwise and roll foil down to seal top
roll up ends of foils to complete seal
bake 45 mins to 1 hour - i baked 1 hour
