sweet and sour pork



this was sooo sooo good! eating chinese food gluten free has been very challenging. i can't even walk into a chinese restaurants without wanting to cry. i was soooooo thrilled to find this recipe. it comes from the gluten free gourmet cooks fast and healthy. enjoy!

SWEET AND SOUR SAUCE
INGREDIENTS
3/4 cup water
2 tbsps cornstarch
2 tbsps rice vinegar
3 tbsps ketchup
2/3 cup sugar
1 tsp gluten free soy sauce

place all the ingredients in a small saucepan and bring to a boil, stirring constantly. remove from heat and use immediately or store, when cool, in a jar in the refrigerator.

SWEET AND SOUR PORK
INGREDIENTS
3/4 lb pork loin or prepared stir-fry pork strips
2 tbsps cornstarch
2 tbsps vegetable oil
1 red or green pepper seeded and cut into 1/4 in slices
1 8-oz can sliced water chestnuts, drained
1 8 1/2-oz can pineapple chunks, drained
3/4 cup sweet and sour sauce
4 green onions, thinly sliced

DIRECTIONS
wash pork loin and slice across grain into thin slices. place cornstarch in plastic bag and tumble meat to coat well. heat oil in large deep skillet or wok. with heat at medium high, cook pork, stirring with wooden spoon until brown on all sides (3-4mins). remove to a bowl.
to juices left in pan, add pepper, water chestnuts, and pineapple. stir fry for 2-3 mins (veggies crisp-tender). pour in sauce and return pork to pan. stir until meat and veggies are well coated. remove to a serving bowl and garnish with sliced green onions.
