here's tonight's dinner! everything was easy to make and very flavorful. i found this recipe on this blog site, and it was originally from allrecipes.com. to make everything gluten free, i used mccormick's spices. after cooking the chops, i thought the paste was a bit too thick, and we had to scrape it off. i would also use less coriander because it was overpowering. i found the potatoes recipe on the nest's "what's cooking board", but i cannot remember who i borrowed it from (sorry!).

1 tablespoon ground cumin
1 tablespoon ground coriander
3 cloves garlic, minced
2 tablespoons olive oil, divided
2 boneless pork loin chops
ground black pepper to taste

DIRECTIONS
mix the salt, cumin, coriander, garlic, and 1 tablespoon olive oil to form a paste.
season the pork chops with salt and pepper, and rub with the paste.
heat the remaining olive oil in a skillet over medium heat
cook the pork chops about 5 minutes on each side, to an internal temperature of 160 degrees F (70 degrees C).
mix the salt, cumin, coriander, garlic, and 1 tablespoon olive oil to form a paste.
season the pork chops with salt and pepper, and rub with the paste.

2 idaho potatoes
olive oil
chili powder, onion powder, garlic powder, salt, and pepper
preheat oven to 425 degrees. dice the potatoes. line the baking pan with foil and grease with olive oil. mix potatoes with olive oil, dash of chili powder, onion powder, garlic powder, salt and pepper. after mixing them well, place in pan and bake for 30 minutes.
