crustless hamburger quiche


this is an old stand-by that i've made for my husband and parents countless times. i decided to make it for a potluck tomorrow and share it with non-celiacs. it is an extremely easy dish to create! so that it is healthier, you can use ground turkey, low fat cheese, and vegenaise instead of mayo. here's a pic, fresh out of the oven. enjoy!

INGREDIENTS
1/2 lb ground beef
1/2 cup light mayo
1/2 cup milk
2 eggs
1 tbsp cornstarch
1 1/2 cups grated swiss cheese
1/2 cup thinly sliced green onions
salt and pepper to taste
DIRECTIONS
preheat oven to 350f. spray a pie tin with cooking spray (i used a regular baking pan). brown meat over medium heat, drain, and set aside. blend the mayo, milk, eggs, and cornstarch until smooth (i had a hard time getting the lumps out). stir in meet, cheese, onions, and seasoning. pour into prepared pan (i mixed everything in the pan). bake for 35-40 mins or until golden brown on top and a knife inserted comes out clean.
