tuna waldorf salad

this is the most amazing tuna salad i have EVER had! it's become a staple in our home. i found this recipe on allrecipes.com and modified to suit our tastes. i enjoy mine with toasted gluten free bread.

INGREDIENTS
1/2 cup vegenaise (recipe calls for mayo)
1 tablespoon prepared Dijon-style mustard
1/4 teaspoon curry powder
salt and pepper to taste
2 (6 ounce) can water-packed tuna
1 shallot, finely chopped
1 Granny Smith apple, cored and diced
1 teaspoon sweet pickle relish
gluten free bread

garnish: american cheese, lettuce if desired

DIRECTIONS
in a medium bowl, whisk together the mayonnaise, mustard, curry powder, salt and pepper. add tuna, shallot, apple and pickle relish and toss until all ingredients are coated with dressing.
